I am a Taste of Home girl all the way. Whenever I am looking for a recipe or a How-To tip, you'll find me on their site. We are having a soup and salad dinner tonight at church and I was looking for something a little different. I ran across this award winning recipe and immediately started making my grocery list. I already have it in the crock-pot and even though I haven't tried it yet, I think this one is going to have a regular spot on the Withrow menu list ;-)
Chicken Corn Chowder
This particular recipe is my first very own creation :-) I had wanted something with chicken and corn and creamy so I started looking up recipes and used ideas from about 3 or 4! The result is one of my favorite comfort soups. It is so quick to make and easy to keep ingredients in stock. The other week I even made it on Saturday evening to have for Sunday lunch! We like it with grilled cheese sandwiches :)
Here’s what you need:
- 1/2 – 1 small onion, chopped
- 1 Tbsp butter
- 2 Tbsp olive oil
- 1 lb. cooked chicken, cubed or pulled
- 1 can cream of chicken soup
- 1 1/2 cup milk
- 1 cup chicken broth
- 1 can whole corn or bag frozen corn
- 1 can diced potatoes or 2 medium potatoes peeled, cubed, and cooked
- (optional) 1 c peas, bacon, and/or shredded cheese
- Above picture is without optional ingredients.
How to fix it:
- In your soup pot, sauté onion in butter and olive oil.
- Combine soup, milk, and broth and add to pot.
- Then add cooked chicken, corn, and potatoes to soup. (opt. peas) and simmer until heated/cooked through.
- Top with bacon and cheddar if desired.
Southwest Chicken Salad
I fixed these salads the other night for supper and thought I would share with you! This salad is soooo yummy and easy to throw together. I got the original recipe out of a magazine and then tweaked it for our taste.
Here’s what you need for the salad:
- green lettuce (I used green leaf lettuce here, but butter lettuce is also VERY yummy for this salad)
- diced red onion
- can of black beans, rinsed
- cooked corn (I got a bag of the frozen sweet corn that you steam in the microwave, makes it extra fast!)
- diced tomatoes
- 1 lb. cooked chicken
- shredded cheddar or Mexican blend cheese
Just layer in one big bowl or individual serving bowls. Sorry I do not have exact measurements. For our family, I normally just cut up what I need at the moment and put in individual bowls.
The Dressing:
- 2/3 cup Ranch mixed with
- 1/4 cup BBQ sauce
